Dirty Linen - A Food Podcast with Dani Valent
Dirty Linen goes behind the scenes in restaurants, cafes and bars, covering issues the hospitality industry finds hard to share in public - it's all up for grabs and everything is on the table. Your host is food journalist Dani Valent. For 20 years, Dani has been writing about restaurants and the people who give them life. But she's an outsider, a critic, a tourist, a fan. Despite hearing the stories and writing the tales, she's never really understood what happens behind the scenes. Now it's time to get stuck in, with compassion, humour and fearlessness. Dirty Linen goes deep, both in conversations with individuals and in pressing topics. We ask the hard questions and discuss the big issues, bringing a unique perspective to a world that we all intersect with but often don’t understand. Dirty Linen is a Deep in the Weeds Production.

KC Hildebrand (Wildfire Craft BBQ, Geelong) - the beauty of BBQ
Show notes
People get obsessed with all kinds of food styles and cuisines. There’s tradition and detail in everything from sushi to burgers to French fine dining. All give the opportunity to go deep.
But I do think there’s a special kind of obsession that grabs those who dive into American barbecue. The cuts, the rubs, the salt, the smoke, the time, the care. KC Hildebrand is the founder of Wildfire Craft BBQ in Geelong. KC has cooked at all kinds of restaurants, including fine dining. Why has Texas barbecue now hooked him in?

Nino Cucciniello (Ercolano) - rising from the ashes
Show notes
Back in 2019, I reviewed a restaurant called Ercolano in Patterson Lakes, an outer bayside suburb of Melbourne. I liked the place. Nino Cucciniello and his family put everything into their restaurant: the pasta, the pizza, the sausages, all made in house. After making it through the pandemic, Ercolano burnt down in 2022. There was a fire in an adjoining tobacco shop which destroyed this family business. It was the first arson attack of more than 200 in the what became known as Victoria’s tobacco wars. Now, more than four years later, Ercolano has relaunched in collaboration with local cafe 38 South, owned by previous customers.

What's on my mind - Notes on France, Wine at lunch, Melbourne Restaurants, Real Connection & more
Show notes
I’m back in Melbourne after a few weeks away, and keen to catch up with you all. In this solo chat, I talk about planning dinner months in advance, travelling through Europe as it melts down, and creating connection, hope and meaning around beautiful food. I like: small menus, wine at lunch, beans. I don’t like: smashing shop windows, algorithms that create binary thinking, fragmentation.

We talk about an industry in transition: punishing long hours have been reined in but that makes it hard to skill up young chefs, even if they’re keen. What to do?

Tony Moss (ALH) - the state of the industry
Show notes
It feels like it’s never not a big time in the restaurant world but this does feel like a particular moment of challenge and change. So for the next little while, Dirty Linen will be posing more questions about the state of the industry - maybe even finding some solutions. What’s happening? What’s good, what’s hard, and what do we do next?
We’ll still be sharing stories, there will still be the warm chats you love, I just want to sharpen the pencil slightly. We’ll be talking costs and pricing, menu engineering, AI, climate, immigration, skills. It’s all on the table.
If you dine in restaurants, even if you love ordering takeaway, if you work in the food world - this is for you.
Tony Moss is the Victorian executive chef for ALH, which runs 350 pubs around Australia. He also finds time to make cooking videos and manage an AI recipe app.

Josh Bosen (From Here By Mike, Melbourne) - Exploring sustainability and creativity in modern dining
Show notes
Josh Bosen was head chef at vegan restaurant Smith & Daughters when he was tapped for the job as chef de cuisine at 1Hotel Melbourne, home of From Here By Mike, a hotel restaurant that uses produce from small local farms. We talk about smart ways to reduce food waste, the reasons he's retained staff, and the boost he gets from watching guests in the dining room enjoy a dish.
We mentioned my long ago chat with Mike McEnearny

Sam Tran (Gia, Hanoi) - memories and produce.
Show notes
Perspective in food is so important - when you’re away from home, it’s often powerful food memories that bring you closer. And when you’re in a new place, you bring a fresh eye to the foods you find. Sam Tran has brought her unique perspectives to the food of both Hanoi, in northern Vietnam, and Melbourne, where she started as a chef. She’s soon to return to her second home of Melbourne for events at Aru, bringing dishes from Michelin-starred Gia in Vietnam filtered by Melbourne memories and Australian produce.
